  1. Se introducen 4 tomates en una cacerola para escaldarlos. Se pelan.
  2. Se cortan las cebollas, el pimiento verde y el calabacín (sin pelar) en mirepoixe.
  3. Se pochan las cebollas en una cacerola con un poco de sal. Cuando llevan unos cuatro minutos, se echa el pimiento y poco después el calabacín y otro poco de sal. Se dejan unos diez minutos más sin tapar, removiéndolo de vez en cuando.
  4. Finalmente se añade el tomate con sal y una cucharada de azúcar. Se sube el fuego y cuando está a punto de entrar en ebullición, se baja y se deja unos 20 minutos con la tapa puesta y removiendo de vez en cuando. Una vez finalizado, se corrige azúcar sal. Tras esperar a que se atempere, se introduce en el frigorífico. En mi caso mejora de un día para otro.
  5. Para la guarnición se fríe un diente de ajo y se incorpora la cantidad de arroz integral que se desee. Tras cubrirlo con agua (2,5 agua /por 1 de arroz) se deja cocinar alrededor de 25 minutos.
  6. El pisto se puede servir frío o caliente.
